Rémi's wines are characterized by a unique approach to vinification, highlighting elegance, depth, and vibrant aromas. With vineyards ranging from 30 to 60 years old, he carefully cultivates predominantly Melon de Bourgogne grapes on frost-free plots of shallow sandy-loam soils over gneiss subsoil.
His signature wines include diverse expressions—from the sweet, rounded character of "Quand je serais Grand.e," matured gently on lees in oak barrels, to the mineral freshness of the "Tatoumi" blend, harmonizing multiple vintages for complexity and depth. "Apnée du Soleil" showcases Rémi’s creativity with oxidative aging techniques in acacia barrels, offering aromatic power coupled with delicate acidity. Additionally, the enticing "Pouvoir des Pierres" offers an approachable entry into orange wines, featuring intriguing notes of caramel through short skin maceration.
