Vinification et élevage : Indigenous yeasts, 15 days of maceration in whole bunches, no punching down, no pumping over, no added sulphur, pressing with a vertical press, maturing on the lees in stainless steel tanks, 8 months maturing on the lees in stainless steel vats.
