In 1995 Vincent Nivet and Julien Jansen founded their domaine with almost 300 ha. in the upper Loire, 285 ha. of cereals, and just 1.5 hectares of vines, which soon became 5 hectares a mere five years later. In the heart of Quincy, planted on sandy-clay-gravel soils they cultivate 35 year-old vines of Sauvignon Blanc, and benefit from their strict organic philosophy since the beginning. They participate in a collective cellar of the Cave Romane de Brinay where their winemaking practices are honed, such as aging on lees to provide a beautifully textured yet fresh expression. If it’s one thing they can claim, it’s that they are the only certified organic winery in Quincy.
From vines averaging 35 years of age, planted in sandy-clay sedimentary deposits across 1.5 hectares dubbed, "the tip." After harvesting the grapes are quickly sorted and pressed without maceration with fermentation in steel tanks over three weeks. Aging occurs in steel tanks for at least 5 months and then light filtration. Ecocert Certified.
